Use for preliminary sharpening, start with the rough disk and follow with the fine disc for smooth sharpening. Ergonomically designed with a comfortable handle, the sharpener is easy to use whether you are right or left handed. Sharpens knives to an angle of 30°, as well as thinner blades to approximately 20°Suitable for both German and Japanese knives.
